I have been wanting to share this recipe for a while. I make it on a weekly basis and everyone in my family loves it. I've even brought it to afternoon tea and my friends are always impressed that this is healthy and delicious. The recipe comes from Teresa Cutter a.k.a. The Healthy Chef. Her website is my go-to for finding recipes that are gluten free and sugar free; she also uses simple ingredients, which means I usually have all the ingredients in my kitchen. Let's just say I've pretty much pinned every post she's ever written.
200 g. almond meal
1 tbsp. flaxseed
1 tbsp. ground cinnamon
1/2 tsp. bi carb soda
1 tsp. vanilla extract
1 tbsp. honey
1 large red apple, chopped into chunks
60 g dried rasins
30 g walnuts, chopped
Coconut oil (for greasing pan)
Preheat your oven to 180 C (160 C fan forced) // Mix dry ingredients: almond meal, flaxseed, cinnamon, bi carb and flaxseed // Add wet ingredients: eggs, vanilla and honey and mix through // Add apple, raisins, and walnuts // Mix well — it will be chunky
Use coconut oil to grease a loaf tin and then dust with a bit of almond meal or coconut // Smooth out the batter with the back of the spoon, making sure it's even // Bake for 40 minutes or until golden and toothpick comes out clean // Remove from oven and allow to cool for about 1 hour before turning out
Serve alone or with some sugar free jam, almond butter, or ricotta + honey.
